Buttermilk Chocolate Cake

Makes about 36 pieces

 

 

Need a cake for a crowd? This is an all-time favorite.

 

1 cup water

1 cup butter, cut into pieces

1/4 cup cocoa

2 cups all-purpose flour

2 cups granulated sugar

1 teaspoon baking soda

1/2 teaspoon cinnamon

2 eggs

1/2 cup buttermilk

1 teaspoon vanilla

Cocoa Frosting

 

Preheat oven to 350°F. In a small saucepan over medium heat bring water, butter, and cocoa to a boil. Stir until blended and set aside.

 

In a bowl stir together flour, sugar, baking soda, and cinnamon. Pour cocoa mixture into flour mixture and beat until smooth. Beat in eggs and buttermilk. Add vanilla and mix well. Pour batter into a lightly buttered 12 by 15 1/2 by 1 1/2-inch jellyroll pan.

 

Bake until a toothpick inserted into the center of cake comes out clean, about 30 minutes. Cool cake on a rack and frost.
