Creamy Cucumber Dressing




1 medium cucumber, peeled and seeded

8 oz. plain yogurt

1 T. fresh lemon juice

1-2 T. chopped fresh dill

1 small clove crushed garlic

1/2 teaspoon ground white pepper



Grate the cucumber over a bowl using a box grater. Use your hands to squeeze out and discard as much excess moisture as you can. In a blender, combine the yogurt, cucumber, lemon juice, garlic, salt and pepper. Blend until smooth and refrigerate until chilled.
